Our Olive Oil
Chez Carlos' cuisine is prepared using extra virgin olive oil extracted using traditional methods from hand picked olives in a granite stone mill. The Monterosa estate in Moncarapacho has twenty hectares of olive grove planted with the varieties Maçanilha, Cobrançosa, Verdeal and Picual. The press dates back to Roman times.
Flor do Sal
Literaly translated as "Flower of Salt", Flor do Sal is the healthiest salt available. Skimmed daily from the salt pans of Rui Simeão on the clean waters of the Rio Formosa, it has gained world renown as a totaly natural product of excelence. Rich in essential minerals, you will notice how it enhances the flavour of your food.
